Red Velvet Cake
The Ingredients
2 ½ cups of plain flour or soft flour (Sifted)
120gm unsalted butter (room temperature)
1 ½ cups castor sugar
2 tbsp cocoa powder (unsweetened)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
1 cup buttermilk
50 ml red food coloring
1 tsp vanilla extract
1 tsp white vinegar

Cream Cheese Icing
500gm cheese (Philadelphia)
120gm unsalted butter
1 tsp vanilla extract
2 cups icing sugar
Pinch of salt

Preheat oven to 180 degrees Celsius. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cocoa.

Beat together the sugar and butter about 3-5 minutes in a stand mixer. Or you can use a hand mixer. Add the eggs one at a time and mix well after each addition. Add the vinegar and the vanilla.

Add half the dry ingredients and mix well, then add half of the buttermilk and/or yogurt if you are using it. Add the rest of the dry ingredients and then add the rest of the buttermilk/yogurt. Lastly add the color until mix.

For cream cheese icing, with an electric mixer blend together cream cheese and butter until smooth. Reduce speed to low and add in icing sugar, vanilla and salt. Increase speed to high and beat until light and fluffy
